&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp<p>材料:鸭子一只。 <br />
&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp配料:葱、姜、蒜、花椒。<br />
&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp调料:啤酒、酱油、蚝油、醋、十三香、料酒。<br />
&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp<br />
&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp  选购鸭子,当首选活杀草鸭,超市里冰冻的鸭子模样很漂亮,味道要大打折扣。先将鸭子洗净,剁成6公分的大方块,滤去血水。准备好葱姜蒜等12样调味品,这是老领导千关照万关照的。<br />
&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp<br />
&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp  热锅内放少许烹调油,先煸炒姜片和葱头、蒜瓣,使香味出来,倒入鸭块,翻炒一会,鸭块变色以后,加一罐啤酒一起煮开,撇去浮沫,加入老抽和生抽酱油,老抽酱油是用来上色的,生抽是取其鲜味。放些醋,用来解腥味,同时将使啤酒鸭吃起来余味无穷。茴香、桂皮、香叶等大料是一定要放的。看看汤不够加些水,到盖没鸭块,然后盖紧锅盖改中火烧煮,小火焖1个小时,然后开盖加点白糖、黑胡椒粉,翻炒均匀。汤汁要收到浓郁粘稠,鸭块全部呈赤红色,方可起锅。<br />

&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp&nbsp  啤酒鸭和以往红烧鸭块不同的是,由于啤酒有嫩肉的作用,且可解腥味,啤酒鸭的肉质分外鲜嫩,即使是酱汁渗透的骨肉分离处,仍然是滋味无穷,令人吮骨难舍难分。</p>
